Pep up your Pancake Day

Whether you have children demanding a pile of pancakes for breakfast or simply love having an excuse to have a stack for dinner, it’s always useful to have a couple of pancake recipe ideas in your arsenal for the big day (or just for those weekends when you fancy giving your morning routine an upgrade). Here, three of our favourite style bloggers share their pancake preferences to inspire your Tuesday. Successfully flipping them in the pan is entirely down to you though.

The American Classic

You can’t go wrong with a classic. Alexis Foreman of Styles Memos always goes for these blueberry pancakes at home with her family in Brighton.

  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 egg
  • 300ml milk
  • Knob butter, melted
  • 150g pack blueberries
  • Sunflower oil or a little butter for cooking
  • Golden or maple syrup

Mix together the flour, baking powder, egg, milk and melted butter into a smooth batter. Stir in half the blueberries (the other half go on top of pancakes later) and dollop into a large pan. Flip the pancakes once bubbles start to appear on the surface. Top with more blueberries and syrup.

Get in your 5-a-day

Super-quick and easy, Chrissabella, aka Christina Hauck’s recipe for banana pancakes is perfect if you’re short on time. This makes enough for 4, so scale up depending on how many hungry mouths you have to feed.

  • 4x bananas
  • 1x cup of oats
  • 4x eggs
  • 2 tsp Maple Syrup

In a blender, combine the bananas with the oats and eggs. Cook in a hot pan until they feel sturdy enough to flip over. Top with blueberries, banana slices and the maple syrup.

The healthy alternative

Tijan Serena’s pancakes, with buckwheat flour and almond milk instead of regular milk, instantly refresh the standard combination.

  • 1x cup of buckwheat flour,
  • 2x eggs,
  • 1x cup unsweetened almond milk
  • Blueberries

Combine the flour, eggs and almond milk first and then mix in the blueberries before you cook. Top the pancakes with crunchy almond butter and whatever else you fancy!
